Ingredients (2 Servings)
  

  • 10 ozw Ground Beef
  • 5 ozw Sweet Corn, frozen
  • 1 bag Cauli-Potato Tots, frozen
  • 1 pkt Beef Stock Concentrate
  • 1 each Shallot
  • 6 ozw Green Beans
  • 2 cups Creamy Mushroom Soup

Instructions

  • Preheat oven to 400°F. Wash and dry green beans. Trim ends and cut beans in half. Peel and dice shallot.
  • In a medium sauté pan, over medium heat, add (1T) 2T vegetable oil and allow to heat for about 1 minute. Add ground beef and cook for about 4 minutes, breaking beef into small pieces as you cook. Add diced shallot, packet(s) of beef stock concentrate, and (1/4C) 1/2Cwater to beef. Cook for 2-3minutes or until beef is cooked through and the liquid has evaporated.
  • In a medium sized pot, fill ¾ full with water and bring to a boil. Add (½T) 1T salt and the green beans. Cook for about 4 minutes until the beans start to soften. Drain and rinse with cold water to stop the cooking process.
  • In a greased casserole dish, evenly layer beef mixture on bottom. Add a layer of creamy mushroom soup (reserve some for the final layer), then a layer of cooked green beans, then sweet corn. Add remaining creamy mushroom soup to the top.
  • Layer cauliflower & potato tots in even rows on top until the entire dish is covered. Season with a pinch of salt & pepper.
  • Bake hotdish in preheated oven for approximately 30 minutes or until tots are golden brown and the hotdish is 165°F. Remove from oven and let cool for 5 minutes.
    Serve & enjoy!

Recipe Notes:

†If your diet allows dairy, add some shredded cheddar cheese to the casserole for an additional layer of flavor!
